This super easy recipe uses bok choy, carrots and green onions and also works well with fresh peas and napa cabbage -- a bunch of our seasonal ingredients!

It takes a raw approach, but I stir fried most of my ingredients instead, adding small cubes of carrots & bok choy stems & tofu to the pan first and all at once, strips of napa cabbage next, peas (that I steamed in the microwave, in a lightly covered ramekin for about 20 sec.) at the last minute, and finally the raw green onions.
As the recipe suggests, I used teriyaki sauce, as well as the addition of a teaspoon or two of sesame oil and soy sauce when I added the steamed peas.
One of the things I'm wondering is if quickly steaming the bok choi leaves would also work for the wrap, do you know? I see online that some folks grill the leaves first, which sounds yummy, too.
