If you have a ripe papaya and about 20 minutes, you can make this terrific dessert by Adrianna Adarme from A Cozy Kitchen. Homemade crust intimidates me, but the instructions seemed so simple -- and it turns out they really are! Definitely give this one a try.
(ps) Though simple to follow, the recipe assumes that you know how to "flour" a pan. Fortunately, a baker in the house (thanks Heather!) made sure that after buttering the pan and then layering on some parchment paper (as the recipe describes), I ALSO buttered the top of the parchment paper before lightly sprinkling it with flour.
