Try this and you (and even your picky eaters -- and Keto dieters!) will be happily surprised. Once roasted, radishes taste more like potatoes that are bit light and sweet.
So, take ALL those scrubbed-clean winter radishes and ...
(1) cut them into tiny cubes (about the size of a blueberry)
(2) spray/lightly coat them with olive oil & sprinkle some salt on them
(3) roast them at 350˚ until tender (about 20 minutes)
(4) put some butter on them.
Even those of us who usually find radishes too earthy & bitter thought they tasted good like this. To ease into it, you could do half potatoes and half radishes.
(ps) Thanks for the dish, Carol!
You're right, I think it would go well with fish. I've yet to try taro, but when prepped like this, I thought the little radish cubes tasted a like sweet corn, with a texture more like a potato.
