As always, I had to skip the onions and garlic (😫 ), adding thinly sliced collards, doubling the celery, and replacing the green pepper with carrots instead. I also topped this with brown rice instead of white, as well as the sliced green onion and some leftover bacon crumbles for my beau. Yum!
