This salad from Char Ferrara at Wok & Skillet (also attached below) is so light, easy and delicious. We have to make it without the fish sauce (allergies) in our house, but if you at least have rice wine vinegar, you're golden.
I have made this (sans fish ingredients) as the recipe describes, but I have also simply used rice wine vinegar, a light oil like avocado or grapeseed (olive would also work), and a little salt and pepper, with fine results. Enjoy!
