So, this decadent casserole by Shannon Decker on All Recipes should probably be a side dish , but we ate it for dinner! I made it a tiny bit healthier by leaving out the sugar and, importantly, replacing half of the butter with Greek non-fat, plain yogurt.
My mom also gave me a tip. Instead of "buttery round" (AKA Ritz) crackers, she uses Stove Top stuffing. She also adds mushrooms and a can of mushroom soup. Yum.
I think it's important, too, to pay close attention to draining the steamed squash really well. You could also garnish this dish, once it's out of the oven, with this week's scallions.
