Has anyone frozen celery before, and, if so, would you recommend it? We got an incredible batch in this week's box, and I use it a lot as an onion replacement. Given the CV-19 scare and all, I'm thinking about how to make it last a while.

Celery is one of those vegetables that once finely blended can be frozen in ice cube trays. Remove cubes and place in a covered container. Keep frozen. The celery can be used in hot dishes and cold dishes like potato salad. For cold dishes microwave slightly or let thaw keeping it cool.
I’ve been wondering if a dehydrator is a good way to go. It sounds like you recommend it. I’ll check it out!
Do you have a dehydrator? I've dehydrated celery before with fine results to go back in soups and spaghetti sauce. We have the Excalibur. I used it a ton last summer.
