I discovered that you can make these into noodles!
1. Spiralize them, like you would with zucchini.
2. Boil them for 1-2 minutes and strain.
3. Top with pasta sauce.
I've done this once, and I was a bit nervous, so I did 1/2 regular spaghetti pasta and 1/2 ... "roodles" (!), throwing the daikon spirals in with the boiling pasta for its last few minutes. Even my beau, a cautious-eater, enjoyed this with pasta sauce. I was pretty psyched.
