Dietitians Jessica Jones and Wendy Lopez shared this recipe for Crispy Baked Parmesan Eggplant Fries and keep breading and oil to a minimum. You can use an air fryer, but they just use the oven. Other variations to this recipe can include:
using panko for breadcrumbs
using a footed baking rack with your sheet pan to elevated the fries a bit, helping them to get more crispy (flip them at the halfway point of baking)
thinly cutting off the eggplants rounded sides (in addition to the top & bottom), basically leaving the eggplant in the shape of a brick in order to evenly cut it -- OR (in order to prevent any waste), slicing the eggplant lengthwise to your desired thickness and making fries of slightly differing sizes (and baking times)
lightly using cooking spray after breading the fries and placing them on the baking rack/sheet
