A plenitude of fairy tale eggplants that fit in the palm of your hand arrived in our CSA box this week. They're a lovely purple color and the perfect size for popping in the oven (or on a grill) for a quick snack or side dish.
On Foods with Judes, author and chef Judith Scharman Draughon (MS, RDN, LDN) includes cherry tomatoes in her recipe, but that's optional. A second option on Kitchn, by restaurateur Cara Mangini, includes a few more flavors, adding the possibility of using our fresh basil. Just use in it place of the mint that the recipe calls for.
