It took us this long to post a dessert made from carrots?! This recipe from Melissa Coleman's The Faux Martha (PDF version attached below) aims to be as healthy as possible and is only about as difficult to mix up as a batch of cookies.
Plus, if you're fortunate enough to have the right pans, you can make donuts!
I only have mini muffin pans, so I'll be using those instead (😫). This quarantine, too, means I'll have to skip the lovely cream cheese icing (double 😫). I think I'll butter the muffins a bit after they come out of the oven and then dip the tops in a mix of 1/2 sugar, 1/2 cinnamon.
This carrot dish should hit the mark here at home.

These were surprisingly easy and really good! I ended up buying donut pans AND making the icing. These were the right moves, indeed, especially because they made eating these with coffee for breakfast seem oh so right.
Notice that this recipe makes only makes medium-sized 6 donuts, it's a small amount of batter. This worried me at first, but I realized in the end it was probably for the best. ;)
