You can eat carrot tops, as I learned from an online "master class" with a surprisingly charming Gordon Ramsay. He used the greens in salads. I'm going to use mine to make veggie stock, setting a bit aside to use as a garnish in place of parsley.
Just be sure to wash these super sandy tops, as you do with any greens. A lot of folks do that right in their sanitized kitchen sinks, covering and swishing the greens with water (multiple times). I'm going to use a stock pot.
