After getting my cutting board, counter top and fingers seriously yellow from trying to cook with grated fresh turmeric, I decided to take a different approach this time. I super-scrubbed the whole stems/tubers of equally-sized turmeric and ginger, and made a tea concentrate, as follows. It's said that golden tea is good for soothing flu symptoms.
2 clean, whole, unpeeled turmeric stems/tubers
2 clean, whole, unpeeled ginger stems/tubers
2 tsp whole black peppercorns (or 3 tsp ground)
1 cinnamon stick
4 cups water
Bring all ingredients to a boil and then simmer for 30 to 45 min. Sweeten to taste with agave or honey (it takes very little, actually!). The black pepper maintains the viability of curcumin (and I can't taste it for some reason), while fats/oils aid absorption (1). Because of this, I reconstitute this brew using equal parts milk and tea concentrate. Many folks use unsweetened coconut milk. It's lovely both cold and warm.
