This dish by nutritionist Stephanie Forsythe-Lang on Very Well Fit can be made with any greens. It got a surprising "these taste good!" from my sweetheart, and the dumplings add some satisfying fun.
I used celery instead of onions/garlic (can't eat 'em, boo) and extra smoked paprika (I left out the poultry seasoning). I think a sprinkling of frozen corn in the dumpling mix -- and a dash of salt in it -- would also be good.
