Intending to immediately say I was joking, I told my beau that I made the blended soup on the stove with sweet potatoes, not (what they really were) carrots. He. Detests. Carrots. His sister, though, likes to tease him and convinced me to hold my tongue by kicking my leg under the table.
And, then, a miracle happened. He tasted it, liked it, and filled up his soup bowl for dinner. It was only after he finished that his sister razzed him, letting him know he'd devoured one of his veggie foes. I've made this carrot-ginger soup by Elise Bauer, founder of Simply Recipes, a number of times since and -- with full knowledge -- he's happily eaten it every time.
Fun fact, it does in fact work with sweet potatoes, too.
(ps) I replace the onions with celery, as alliums hurt my stomach.
